This is a good quality post.
Souls-like
Dark Souls 2 (vanilla)- actually an extremely good game. No one gave it a chance. because of some poor design choices. I love the nuts build variety. The souls economy being flush means a lot of flexibility. Combine this with ADP being a skill you can pump for up to a second on invulnerability, and you have a good time. I've replayed with different builds and unique ones so many times.
Platformer
Mega Man 2 - a classic, enough said. It was/is my favorite for a long time.
Viewtiful Joe 2 is also very very good.
Survival Horror
Eternal Darkness - It's hard to decide between classic RE2, RE0, and Eternal Darkness. However, I think Eternal Darkness is best.
Beat 'em Up, Character Action
DmC - I don't care what people say. I like it a lot. Senran Kagura 2 is also amazing and in the running (after you get used to the jank). Katsuragi is best girl.
Danmaku
Exceed 3rd Jade Penetrate Black Package - one of the best shmups to exist. It's my favorite. I'm a big danmaku fan. So, I have a lot of recommendations.
RPG
Persona 4 (for PS2, not Golden) - It deserves its good reputation. Tracey Rooney's Chie is best girl. I might also pick Mega Man X: Command Mission. It's a unique RPG with some great mechanics and characters. Marino's special lets her take like 20 turns in a row, which gets nuts.
Ecchi/H
Evenicle - Lewdness aside, it's a fun RPG with good humor and characters. I enjoyed it a lot.

I'm not good at ranking, Bungie's Halos are good, Disgaea 5's been getting me recently, MGSV is fun as hell to play, L4D2 is great, Vermintide 2 aswell.

I guess I've got to go via hours played, so you might start to see a familiar theme, that I consider the first sequel to be the best.
Civ 2 This is, IMO, the pinnacle of Civilization games. I have sunk more time into this over my life than any other game. I still load it up almost daily for some mindless 4Xing
Diablo 2 The undisputed pinnacle of Diablo games. This is a very close second to Civ2 on amount of time played, although recently I have ditched it for another ARPG which is still receiving developer support and doesn't have the sour taste of Blizzard.
Minesweeper This should be self-explanatory. It is the best logic game there is.
Grim Dawn As far as ARPGs go this one probably has the best lore and world building out there. It runs on the old Titan Quest engine and is developed and supported by the old THQ team who formed CRATE. It's about to get its 3rd expansion and that makes me pretty happy. This is the only game I still spend money on.
Unreal Tournament The original and the best. It's an absolute pain to get networking to work with it though. But if ever I attend a real LAN party this is the go-to to boot up for massive multiplayer FPS.
QUAKE II Nothing beats Quake and its sequel for killing hell's minions.

Being a pedant, but the word "Pagan" to me means Indo-European religions, not Shinto, that's the way it's mostly used around our circles. Pedantically speaking you are absolutely right. Let's say then that they are polytheists. Shinto is polytheistic and Buddhism, while based on the Dharma, is also rather polylatric. The fine point is that the Japanese are more religious than many European people now, and they understand better that the world is in a struggle between good and evil than many European people now do. As for Doom, killing demons is fine but I find the versions after DOS to be too cheesy with demons teleporting in suddenly behind you. It makes a sneaky approach infeasible.

What about Doom 2016? That's pretty great for killing demons. Or Eternal I bounced super hard on Eternal. The gameplay just didn't feel natural. Requiring the glory kill takes the fun out of it.
