It's an odd choice, but I'd probably go with Queen's Blade (2). The first half (12 episodes) isn't too much to talk about. However, the second half is absolutely packed with character arcs, emotion, and pure hype. There are some particular moments (white-haired Tomoe in the courtyard or woods) that are just so striking and powerful with character motivation/meaning. It's really heavy on the ecchi side, but that's not why I like it.
You have character redemption arcs, villain arcs, duty vs ethics arcs. It' so dense that it completely makes up for the bland first half and then some. The ending theme is also a real ear-worm, done in a big-band burlesque style- describing 3 of the antagonists.
I would expect myself to say something scifi or with robots, but character-focused adventures with goal-oriented characters really grab me.

I know it's super cliche, but my favourite will always be Cowboy Bebop. I'm old enough to have watched it when it was new, and I've loved it ever since. I don't think there's a single negative that can be said about the show. The animation is always at the highest standard. The plot, both in terms of each episode and the over-arching meta narrative is both well designed and executed. Every character is thought out and makes sense. Every interaction between them is internally consistent. It truly is "The work, which becomes a new genre itself"

It's very popular for a reason. There's a couple things I don't like about it, but it is one of the best anime out there. With a soundtrack by Yoko Kano, it's hard to lose.

What is it about Cowboy Bebop that doesn't appeal to you?

Gonna be THAT fag and say Evangelion. For some reason....it just HIT me at 14. It was the first anime I ever torrented, the first one I joined online forums (like this one) to chat about, the first anime DVD I ever bought, and the first manga I bought with my own money. The criticisms of it are valid for sure (especially of the rebuilds), but man....it will always be my favorite.
Close seconds: Madoka Magica, Record of Grancrest War, FMA:B, Akira, GitS, Samurai X (yes...the OVAs), & Cowboy Bebop. Gundam W strictly for nostalgia purposes (and Wing Gundam Zero Custom is badass AF fite me)
Favorite anime FILM of all time is Princess Mononoke. I rented that one SO many times from Blockbuster as a kid, and I was the only one in my city who ever did. When the store shut down, the staff gave me the DVD I rented so much as a gift. I still have that disc on my shelf, original case and everything.

I kid. I liked the first half of Eva, and a ton of people like it. It's just not for me.
IDK how many people like the original compared to the remakes. Is there one you prefer?

I MUCH prefer the original series, but the anime, manga (which technically came first to drum up interest), and Rebuild films all work together to tell one complete story.
The issue people had with the original, and it's kind of valid, was that Anno literally was going nuts while creating it. He was in deep depression, and the ending of the series reflected that, something everyone just...didn't get at the time. I think the ending was actually pretty brilliant and groundbreaking in a way. The End of Evangelion film was a response to the death threats and hate Anno received after the series conclusion (you can see that artwork in a sequence in the film). People were pissed off that Anno went esoteric in the series, so he tripled down on EVERYTHING and then gave a "fuck you" ending. Creatively, for the story, I thought it was....lame, but....what a badass move overall. hahahaha
In terms of "mecha shows that aren't REALLY about the mecha", I think RahXephon and Escaflowne did a better job of telling a cohesive story, but their creators also weren't on antidepressants and antipsychotics during their creation, so...lol.
And if you REALLY wanna get deep with it...esoteric cabal of Jewish Kabbalah believers using ancient mystical knowledge to create in Man's own image, defying God, and bring about the end of the world? I mean....that's about on par with FMA in terms of "holy based wtf". hahahaha

The first half was good for me. It's just when the craziness and spitefulness worked its way in, there was a huge dip in quality and narrative. I do understand some struggle between doing what he wants and what people want him to do.

(it was arrangement episode 2 that hooked me on the anime, it told me it was going to be "different" from other anime) I like very much where it goes in the 2nd half... especially with director's cuts. I'm one of those people that LOVED how the TV series ended.

K-On! 3. GitS:SAC (1) 4. Hunter=X=Hunter 5. Full Metal Panic! 6. Full Metal Alchemist 7. Elfen Lied 8. Evangelion 9. Ergo Proxy 10. Fluorite Eye's Song For me this list takes into account everything from story and animation to soundtrack and internal character consistency of motive and actions.
